The origin of tequila culture traces its roots back to the 16th century in Jalisco, a southwestern Mexican region. Modern production techniques trace their development back to these earlier versions of tequila, where blue agave was cooked, ground, fermented, and distilled, mixing both indigenous fermenting practices with Spanish distillation techniques. There are other similar alcohols made even earlier, but this is the closest version of what we know now as tequila.
